  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 cup all-purpose flour
  • 8 oz cream cheese, softened
  • 2 tsp instant coffee granules
  • 1 tsp vanilla extract
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan or line it with parchment paper.
  2. In a mixing bowl, combine melted butter and sugar until smooth. Add eggs one at a time, mixing well after each addition. Gradually add cocoa powder and flour; mix until just combined.
  3. Stir in instant coffee granules and vanilla extract; set aside.
  4. In another bowl, beat softened cream cheese with sugar until creamy. Add an egg and vanilla extract; mix until smooth.
  5. Pour half of the brownie batter into the prepared pan, followed by dollops of cheesecake mixture. Swirl gently with a knife before adding the remaining brownie batter on top.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out mostly clean. Cool before slicing.
