  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 cup fresh raspberries
  • 8 oz cream cheese (softened)
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a medium bowl, mix melted butter with granulated sugar until combined. Add eggs one at a time, whisking until smooth. Stir in cocoa powder and flour until just combined.
  3. In another bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract; mix until creamy.
  4. Pour half of the brownie batter into the prepared pan, dollop cheesecake mixture on top, and scatter fresh raspberries. Add remaining brownie batter and swirl gently with a knife.
  5. Bake for 30-35 minutes or until a toothpick comes out with moist crumbs. Allow cooling before slicing.
