Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and poppy seeds.
- In another bowl, mix together Greek yogurt, milk, eggs, lemon zest, and juice until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined (lumps are okay).
- Preheat a non-stick skillet over medium heat and add butter.
- Pour about 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on top (about 3 minutes), then flip and cook for another 2-3 minutes until golden brown.
