  • 2 large eggs (room temperature)
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 2 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • pinch of cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease.
  2. In a bowl, whisk together flour, sugar, baking powder, cinnamon (if using), and salt.
  3. In another bowl, mix eggs, milk, melted butter, and vanilla extract. Combine with dry ingredients until just mixed.
  4. Fold in diced strawberries gently.
  5. In a separate bowl, beat cream cheese and powdered sugar until smooth; add a splash of vanilla extract.
  6. Fill muffin cups halfway with batter, add a dollop of cream cheese mixture on top, and cover with more batter until two-thirds full.
