  • 2 medium Russet or Yukon Gold potatoes, diced
  • 2 medium carrots, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Wash and peel the vegetables, then chop the potatoes, carrots, and onion into bite-sized pieces. Mince the garlic.
  2. In a large pot over medium heat, drizzle olive oil. Add onions and cook until translucent (about 5 minutes). Add minced garlic and sauté for another minute.
  3. Stir in diced carrots, potatoes, and rinsed lentils; cook for about 2 minutes until combined.
  4. Add vegetable broth along with cumin and smoked paprika. Bring to a gentle boil while stirring occasionally.
  5. Reduce heat to low; let the soup simmer uncovered for about 30-40 minutes until lentils are tender. Stir occasionally to prevent sticking.
  6. Adjust seasoning with salt and pepper as desired before serving.
