  • 150g pancetta or guanciale, diced

  • 100g freshly grated Parmesan cheese

  1. Prepare all ingredients by dicing the pancetta or guanciale.
  2. Cook spaghetti in boiling salted water until al dente (approximately 8-10 minutes).
  3. In a skillet over medium heat, cook the pancetta or guanciale until crispy (5-7 minutes).
  4. In a bowl, whisk together eggs and Parmesan cheese until smooth; add black pepper.
  5. Reserve some pasta water before draining spaghetti. Quickly toss hot spaghetti into the skillet with crispy pork off the heat.
  6. Pour in the egg mixture while tossing vigorously to create a creamy sauce. Add reserved pasta water as needed for desired creaminess.
  7. Season with additional black pepper and serve immediately.
