  • ½ cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 1 cup heavy cream (cold)
  • 1 cup dark chocolate chips (melted)
  • 1 cup pecans (toasted and chopped)
  • 2 tsp vanilla extract
  • ¼ cup unsweetened cocoa powder
  • 3 large eggs (room temperature)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine chocolate graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  3. Bake the crust for about 10 minutes; let cool completely.
  4. Beat softened cream cheese and granulated sugar until smooth.
  5. Melt dark chocolate chips; fold into the cream cheese mixture along with cocoa powder and vanilla extract.
  6. Mix in eggs one at a time, then fold in toasted pecans.
  7. Pour filling over cooled crust and bake for 50-60 minutes or until edges are set.
  8. Cool in the oven for an hour before chilling overnight in the refrigerator.
