  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 cup unsalted butter (softened)
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 cup whole milk
  • 4 cups powdered sugar (for frosting)
  • Food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
  2. In a large bowl, cream butter and sugar until light and fluffy (3-5 minutes). Add eggs one at a time, mixing well after each.
  3. In another bowl, sift together cake flour and baking powder. Gradually add to the creamed mixture, alternating with milk, until combined. Do not overmix.
  4. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks to cool completely.
  5. For frosting, beat together softened butter and powdered sugar until creamy. Add vanilla extract and milk to desired consistency.
  6. Frost cooled cakes, layering them with frosting in between, and decorate as desired with sprinkles or food coloring.
