  • 2 cups elbow macaroni
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 1 tsp garlic powder
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil
  • Fresh basil (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken breasts seasoned with salt and pepper. Cook until golden brown and no longer pink (5-7 minutes).
  2. Stir in elbow macaroni and chicken broth. Bring to a gentle boil, then reduce heat to low. Cover and simmer until pasta is al dente (8-10 minutes).
  3. Pour in heavy cream and stir gently to combine. Gradually add mozzarella cheese, stirring until melted.
  4. Season with garlic powder and Italian seasoning; mix well. Transfer to an oven-safe dish if desired, then top with grated parmesan cheese and panko breadcrumbs. Drizzle with olive oil.
