  • 1 pound fresh salmon fillet, cut into bite-sized cubes

  • 1 cup panko breadcrumbs
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • 1 tablespoon butter (optional)
  • Fresh dill for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Pat the salmon cubes dry with paper towels and season with salt and pepper.
  3. In a saucepan over medium heat, melt butter (if using) and sauté minced garlic until fragrant (about 1 minute).
  4. Add heavy cream to the pan, simmering until it thickens slightly. Stir in lemon juice and adjust seasoning.
  5. Dip each salmon cube into the garlic cream sauce then coat with panko breadcrumbs.
  6. Place coated salmon bites on the prepared baking sheet, drizzle with olive oil.
  7. Bake for 12-15 minutes or until golden brown and cooked through.
  8. Garnish with parsley and serve immediately with extra garlic cream sauce.
