- 3–4 boneless, skinless chicken breasts
- 6 slices thick-cut bacon
- 4 cloves fresh garlic, minced
- 1/4 cup low-sodium soy sauce
- 1/2 cup chicken broth
- 2 tbsp honey
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp onion powder
- 1 tbsp olive oil
- Cornstarch (optional for thickening)
Instructions
- Trim excess fat from the chicken breasts and pat dry.
- In a skillet over medium heat, sauté chopped bacon until crispy; drain on paper towels.
- In a bowl, whisk together minced garlic, soy sauce, chicken broth, honey, black pepper, thyme, onion powder, and reserved bacon drippings.
- Place chicken in the slow cooker and pour the sauce over it. Top with crumbled bacon.
- Cook on low for 6-7 hours or high for 3-4 hours until the chicken reaches an internal temperature of 165°F.
- If desired, mix cornstarch with water to thicken the sauce during the last 30 minutes of cooking.
