  • 34 boneless, skinless chicken breasts
  • 6 slices thick-cut bacon
  • 4 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/2 cup chicken broth
  • 2 tbsp honey
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp onion powder
  • 1 tbsp olive oil
  • Cornstarch (optional for thickening)

Instructions

  1. Trim excess fat from the chicken breasts and pat dry.
  2. In a skillet over medium heat, sauté chopped bacon until crispy; drain on paper towels.
  3. In a bowl, whisk together minced garlic, soy sauce, chicken broth, honey, black pepper, thyme, onion powder, and reserved bacon drippings.
  4. Place chicken in the slow cooker and pour the sauce over it. Top with crumbled bacon.
  5. Cook on low for 6-7 hours or high for 3-4 hours until the chicken reaches an internal temperature of 165°F.
  6. If desired, mix cornstarch with water to thicken the sauce during the last 30 minutes of cooking.
