- 1 cup blueberries (fresh or frozen)
- 1 tsp vanilla extract
- 3 large eggs
- Powdered sugar (for dusting, optional)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press this mixture into the bottom of the prepared pan.
- Bake the crust for about 10 minutes until golden. Let it cool.
- In another bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well. Stir in sour cream, lemon juice, lemon zest, and vanilla extract until smooth.
- Add eggs one at a time, mixing gently after each addition. Fold in blueberries carefully.
- Pour filling over the cooled crust and spread evenly.
- Bake for 30–35 minutes until set but slightly jiggly in the center. Cool at room temperature before refrigerating for at least 4 hours.
- Lift out using parchment paper, slice into squares, and serve with optional powdered sugar dusting.
